Potato Latkes Recipe

I write this recipe due to niki-chan's request (thanks so much for the request!) :D
First thing I want to say, potato latkes (or potato pancake, whichever you wanna call it), is a traditional cuisine from many country such as Germany, Luexembourg, Austria, Latvia, etc. It's traditionally eaten on Hanukkah Festival by Jews. It's ingredients is so simple, yet tasty and can feel like it's special on different serving which makes this recipe is my fave to make :D






Ingredients:
- 4 large / 5 medium poatoes
- 1/4 onion
- 1 egg
- cold water enough to sink all of the potatoes
- 15-20 ice cubes
- 2 1/2 tablespoons flour
- a pinch of nutmeg
- 2 teaspoons of coriander
-chili powder
- salt
-pepper

Tools:
- Grater with large holes (or anything that can cut the potatoes into large chunks)
- peeler
- big bowl, medium bowl, and bowl strainer

Directions:
  1. Pour the cold water, ice cubes, and 2 teaspoons of salt into large bowl, stir. The salt makes the water even colder and prevent the potatoes to change colour
  2. Wash the potatoes, peel it, and put it into the cold water
  3. Grate the potatoes and onion inside the cold water
  4. after finish, rinse the potatoes and onion, then squeeze them by hand to make sure that the potatoes are really dry.
  5. Put the potatoes and onion inside medium bowl, add the flour, nutmeg, coriander, chili powder, salt, pepper, and mix well. then add the egg into the mixture and mix it again
  6. after mixed well, put the mixture into the bowl strainer. this is to prevent the potatoes to get wet because they produce water
  7. heat the oil in the frying pan, add a spoonful of the mixture and press it so the shape is like a coin. fry it in the medium low heat. it's important not to fry so many (just 3-4, max 5 at once).
  8. While frying, try to make some little holes by  stabbing the latkes. this can make the latkes fried evenly, because sometimes although the outside are golden brown, they still have some "flour taste" inside
  9. fry until golden brown but soft inside
  10. serve with some sour cream or chili sauce :D
N.B :

  • Sinking the potatoes into cold water and make sure they really dries when frying makes the potatoes crispier after fried. this applied to every fried dish like sweet potatoes, carrots, pumpkin, or anything when you want to deep-fried it
  • if you don't like onion, you can totally skip the onion step, add some garlic powder when mixing the ingredients instead
  • try to add some toppings, put some cream cheese and smoked salmon on top of the latkes. while it surely tastier, it also makes the food somewhat sepecial for some special occasions (see pic below) :D

I read many references for the recipe and improved the recipe to my own taste by myself :D
