Baked chicken and Potatoes






This baked chicken and potatoes is so simple yet tasty, and great for New Years Eve dinner. Preparation is not taking too much time, as the rest of it will be done by our oven :D so without further delay, let's get started!

Ingredients:

  • 2 or 3 large potatoes
  • 3 chicken legs without skin
  • dried parsley
  • dried rosemary
  • half onion
  • 8 garlic cloves
  • 2 tablespoon of margarin/salted butter
  • salt
  • pepper

Preparations (please do all of these first before you start cooking!):
  1. Preheated oven into 180C degree
  2. Cover baking pan with 3 tablespoon of oil
  3. unfroze the chicken legs, seasoned with salt and pepper
  4. cut the potatoes into bite-size pieces with the skin on
  5. cut the onion into big chunks with the skin still on
  6. mix the margarin with 1teaspoon of parsley and 1 teaspoon of rosemary

Start!
  1. put all of the potatoes into the baking pan, sprinkle salt, pepper, dried parsley, dried rosemary with generous amount (rosemary is less than parsley, as it has stronger taste than parsley), especially salt and pepper since they will be absorbed while baking, and the taste will be gone. So you need to put more salt and pepper than you usually do. mix them well with your hand, as this will make the oil and the spices mixed together better. 
  2. adjust the potatoes into single layer in the baking pan
  3. cover the chicken leg (which already sprinkled with salt&pepper) with the margarin mixture. don't worry if the margarin doesn't cover the chicken well, since they will be melted and reach all part.
  4. put the chicken into the baking pan, but don't put it above the potatoes, instead, make a room for the chicken so ALL of the chicken and potatoes come in single layer. this is very important since it won't have nice color if you don't have single layer.
  5. bake them for 45 minutes
  6. after 45 minutes, remove from the oven and let it cool down a bit, then serve it. the chicken usually have some juice come out while cooking, take the juice and put it onto the chicken and potatoes, since it makes the dishes tasty and full of flavour.


NB:
  • if you like chicken skin and want to eat the skin as well, i recommend  to sprinkle the salt and pepper on the skin and under the skin (on the chicken meat), and then spread the margarin on the skin and under the skin. this will make not only the skin is crunchy and has the flavor, but the chicken meat is also has flavor.
  • it is important to keep the onion's and garlic's skin on, as if you peel it, they would be burnt and taste bitter
